The first recorded date of Christmas being celebrated on December 25th was in 336AD in the time of the Roman Emperor Constantine (he was the first Christian Roman Emperor). A few years later Pope Julius I officially declared that the birth of Jesus would be celebrated on the 25th December.

Cranberry Sauce - a traditional accompaniment to roast turkey. - 500 g (18 oz.) fresh cranberries - 250 ml (1 cup) cider vinegar - 250 ml (1 cup) water - 250 g (9 oz.) brown sugar - 1 cinnamon stick - 1 tsp. ground allspice - 1 piece of peeled ginger Place all the ingredients in a saucepan and simmer over low heat for about 20 minutes; remove the cinnamon stick and ginger; pour into a sauce boat or bowl.
